Rice pudding recipe is an easy dessert recipe and is often prepared in various religious functions.

Due to its popularity there are many different methods and ingredients used to prepare Rice Pudding.

At the basic level Rice Pudding is a simple dish prepared with Rice and Milk. You can use White Rice – long grain or short grain, broken rice and Brown rice to prepare it.

For Milk you can use Whole Milk, Coconut Milk or Cream. To add additional flavouring you can use Vanilla, Coco powder, Rose water or toppings such as Almond, Raisins and Cashew.

In many places, running Honey or sugar alternative are used as sweeteners.

Rice pudding aka Kheer holds a special place in Indian Cuisines and is mostly cooked in special occasions or as religious offerings.

You may easily find it as a dessert option in many restaurants and hotels. Rice pudding can be served both hot and cold, it is matter of personal preference.

In various Hindu festivals such as Diwali or as an after fast meal Rice pudding is served with Jeera Aloo, Poori and Raita. Rice pudding is also served in many other religions as a dessert item.

In this article we will cover Rice Pudding recipe as it is often prepared in Indian sub-continent.

Making Rice Pudding at home

In this section we go through few easy steps which you need to take to make Rice Pudding at home.

Preparation of Rice Pudding

In this step we will roast Cashew and Almonds. You can skip this step and use roasted Cashew and Almonds available in this market.

Also if you don’t like roasted Cashew and/or Almonds you can use them without roasting.

To roast, take 1/2 tbsp Clarified butter or Vegetable Oil in a frying pan.

Once the Clarified butter or Vegetable oil is hot, add Cashew nuts and Almonds to it.

Stir for a minute or two and take them out in a small bowl. Keep them aside. Once the nuts will cool down they will become crispy.

Now, chop roasted nuts and Pistachio.

Make Rice Pudding

Pour milk in a clean utensil with thick base and put it on high flame to boil it.

To make Rice pudding first boil milk in a frying pan

Take White Rice in a bowl and rinse it with water.

Wash rice properly and wait for the milk to boil

Once the milk starts boiling, set the flame on low and add rice to it.

Now let the Rice Pudding cook in low flame for next 20 mins. Stir occasionally so that it does not stick to the bottom of the pan.

Check if the Rice is soft.

After stirring for few minutes rice will start becoming soft, meaning your Rice pudding is cooking and coming up nicely

Once the Rice is soft and the milk is thick, add Saffron threads and Cardamom Powder.

Cardamom powder is an optional ingredients and we have not used it while preparing Rice Pudding.

If however you are adding it, this is the right time to add it.

Stir it for a couple of minute and now add Sugar to it.

Stir until the milk becomes thick.

Now add roasted nuts to it. If you do not prefer roasted nuts, you can choose not to roast them and simply add chopped nuts to Rice pudding.

Usually the roasted nuts taste better and that is the preferred approach from our side.

Stir it for a minute and switch off the flame.

Your Rice pudding is now ready to be served. Serve Rice pudding with some chopped Pistachio and dried coconut chips.

You can also, top Rice pudding with some blue berries and thinly cut Banana slices while serving.

If you like Chocolate flavour you can also add some coco powder – 1 – 2 tbsp coco powder while making Rice Pudding or why not add some chocolate chips on top to make some Chocolate Rice pudding or better to say Rice pudding with some chocolaty flavour.

Chef Recommendation for Rice Pudding

  • Using roasted nuts is a personal preference and you can also use nuts without roasting them.
  • Rice Pudding can be served both hot and cold.
  • In this recipe we have made moderately thick Rice Pudding but you can make it much more thicker. To make it more thicker you can slightly increase quantity of Rice or let the Rice pudding cook for another few minutes. How much thick Rice pudding you like is a matter of personal choice.
  • You can use Sugar free or similar Sugar alternatives such as honey or maple syrup as sweeteners.
  • You can also, top Rice pudding with some blue berries and thinly cut Banana slices while serving.
  • If you like Chocolate flavour you can also add some coco powder – 1 – 2 tbsp coco powder while making Rice Pudding.

  • Once the Rice becomes soft and the Milk will start becoming thick it is time to add Saffron threads and Cardamom Powder.

  • Stir it for a couple of minute and now add Sugar to it. Stir until the milk becomes thick.

  • Now add roasted nuts to it. Stir it for a minute and switch off the flame.

  • Great job! Rice pudding aka Rice Kheer or simply Kheer is ready to be served hot or cold. Add chopped Pistachio and dried Coconut chips on top while serving.
