How to make Suji Halwa or Rava Sheera

  • Take a clean utensil and put it on gas. Set the flame on High.
  • Now add Clarified butter to the utensil. As soon as the clarified butter melts add Semolina (Suji) to it.
2 tbsp Clarified Butter, 1/4 cup Semolina
  • Start stirring it until the mixture becomes golden brown in colour. Do not stop stirring else Semolina may get burnt.
    1/4 cup Semolina
  • Now add boiled water to roasted Semolina and keep stirring the mixture.
  • The water will soon start evaporating. Once half of the water has been evaporated and the pudding starts getting thicker add sugar to it and keep stirring it.
    2.5 tbsp Sugar
  • In another few minutes, almost all of the water will evaporate and pudding will start losing clarified butter implying your Suji Halwa or Sooji Halwa is ready. Turn off the gas now.
  • Your Suji Halwa is now ready to be served. But before that garnish it with chopped nuts. Enjoy a tasty dessert.

Notes

Few considerations while cooking and serving -
  • If you are allergic to nuts or want to avoid them, then you can replace it with chopped and grated dry coconut. You can also add raisins while serving.
  • You can also enhance flavour by adding Cardamom powder (crushed Elaichi) or Saffron.
  • If you like then you can replace water with some skimmed boiled milk. In this case the taste and texture of Suji Halwa would be quite different.
