Gobi Paratha Recipe

Cauliflower is a cruciferous vegetable just like Broccoli and Cabbage. During winters you can find them in abundance in the market. Cauliflower aka Gobi or Gobhi in Hindi language is very low in calorie where a 100 gm Cauliflower adds 25 calories to your daily intake. It is a good source of Potassium and dietary fibers which is good for health. Considering the nutritional benefits and low calories you should consider it in your diet plan. There are many different ways in which you can consume Cauliflower - Boiled Cauliflower, Cauliflower veggie soup, Aloo Gobi, Cauliflower Paratha aka Gobi Paratha etc. If you are on diet then you may want to consume Cauliflower as Salad or Boiled. In this article however we will be talking about a lesser healthy but quite tasty recipe - Gobi Paratha Recipe.

Ingredients

Main Ingredients for Gobi Paratha Stuffing

  • 100 g Cauliflower Gobi aka Gobhi
  • 1 tsp Salt Namak or As per taste
  • 1/2 tsp Red Chillies Powder Lal Mirch
  • 10 g Green Chilies Hari Mirch
  • 1/2 tsp Garam Masala
  • 1/4 tsp crushed Black Pepper
  • 2 tbsp Vegetable Oil
  • Few Coriander Leaves

Main Ingredients for Gobi Paratha Dough

  • 1 cup Wheat flour Aata
  • 1/4 tsp Salt
  • 1/4 tsp Carom Seeds Ajwain
  • 1 tsp Vegetable Oil

Instructions

How to make Gobi Paratha Stuffing

  • Cut Cauliflower into large pieces and wash them properly.
    100 g Cauliflower
  • Now grate Cauliflower pieces using a grater or chopper / mixer. Also, Chop Green chillies and Coriander leaves into small pieces.

  • Mix grated Cauliflower aka Gobi with Green chillies, Red pepper, Garam Masala, crushed Black Pepper and Coriander leaves. Salt will be added later while adding stuffing.
    100 g Cauliflower, 1/2 tsp Red Chillies Powder, 10 g Green Chilies, 1/2 tsp Garam Masala, 1/4 tsp crushed Black Pepper, Few Coriander Leaves, 1 tsp Salt
  • Your stuffing is ready.

How to make Gobi Paratha Dough

  • To prepare dough take wheat flour in a bowl or broad utensil and add 1/4 tsp Salt, 1/4 tsp Carom seeds and 1 tsp Vegetable Oil in it.
    1 cup Wheat flour, 1/4 tsp Salt, 1/4 tsp Carom Seeds, 1 tsp Vegetable Oil
  • Now knead it with 1/2 cup of water. Once done, cover it and leave the dough for 5 mins, so it will become soft. While preparing dough you may want to experiment with quantity of water to get the perfect dough.
  • Divide the dough into 4 equal sized balls.
  • You are now ready to make Gobi Paratha.

How to make Gobi Paratha

  • Take a frying pan and put it on gas to heat up.
  • Take the dough ball and flatten it using rolling pin to 4 inches circular shape.
  • Apply some Vegetable Oil on the flattened dough and sprinkle 1/4 tsp Salt on it.
  • Now take approx 2 table spoon Gobi stuffing and seal the stuffing inside the flattened dough. Now round it with fingers.
  • Roll the stuffed dough ball to create a circular shape Paratha using the rolling pin until it is 6 -7 inches in size. Make sure you apply the pressure evenly while rolling and sprinkle small quantities of dry wheat flour while rolling so that Paratha does not stick to the surface.
  • Once done put your Gobi Paratha in the frying pan and let it cook for a minute on one side, flip it over to the other side and apply some Vegetable Oil. Again after a minute or so flip the Paratha and apply some more Vegetable oil on the other side. Ensure the gas is on medium flame or else the Gobi Paratha will not be crispy and soft.
    2 tbsp Vegetable Oil
  • Roast it for sometime from both sides. Ensure it does not burn by keeping on gas for too long.
  • Aha! Your Gobi Paratha is ready to be served with tea or coffee.

Notes

Few considerations while cooking and serving -
  • Try Gobi Paratha by complimenting it with Pickle, Curd, Green Chutney or Milk Cream with Sugar (Malai).
  • Remember not to add Salt while preparing Stuffing else the Salt will make Cauliflower loose more water and this will in turn spoil your dough.
  • We have used Kashmiri Lal Mirch aka Kashmiri Red Chilli Powder. If you are using more hot chilli powder then use the quantity accordingly else it may spoil your experience.
  • If you are using chopper / mixer do not fine Cauliflower too much else you may not get its flavour while eating.
