Ingredients

Main Ingredients for Mooli Paratha

  • 1 cup Wheat flour Aata
  • 1 cup grated Radish Mooli
  • 10 g Green Chillies Hari Mirch
  • 3/4 tsp Red Chillies Powder Lal Mirch
  • 1/4 tsp Garam Masala
  • 1/4 tsp Carom Seeds Ajwain
  • 1/2 tbsp Salt Namak or as per taste
  • Few Coriander leaves Hara Dhaniya
  • 2 tbsp Vegetable Oil
  • 1 tsp Vegetable Oil for kneading

Instructions

Preparation Steps to make Mooli Paratha

  • Peel Radish to remove the thick outer coating. Now grate Radish and squeeze the juice into a cup. We will use this juice to prepare the dough. Also, Chop Green chillies and Coriander leaves into small pieces.
1 cup grated Radish, 10 g Green Chillies, Few Coriander leaves
  • Now add 1/4 tsp Salt, Carom seeds and 1 tsp Vegetable oil in wheat flour and knead it using Radish juice. If required then add little water or make the dough. Once done, leave the dough for 5 mins so it will get soft.
1/4 tsp Carom Seeds, 1/2 tbsp Salt, 1 tsp Vegetable Oil, 1 cup Wheat flour
  • Mix grated Radish or Mooli with Green chillies, Red pepper, Garam Masala and Coriander leaves. Salt will be added later while adding stuffing.
1 cup grated Radish, 10 g Green Chillies, 3/4 tsp Red Chillies Powder, 1/4 tsp Garam Masala, Few Coriander leaves

How to make Mooli Paratha

  • Take a frying pan and put it on gas to heat up.
  • Now divide the dough and make 4 equal sized balls.
  • Take the dough ball and flatten it using rolling pin to 4 inches circular shape.
  • Apply some Vegetable Oil on the flattened dough. Now take spoonful of stuffing, add some Salt to it, mix it and seal the stuffing inside the flattened dough. Now round it with fingers.
  • Roll the stuffed dough ball to create a circular shape Paratha using the rolling pin until it is 6 -7 inches in size. Make sure you apply the pressure evenly while rolling and sprinkle small quantities of dry wheat flour while rolling so that Paratha does not stick to the surface.
  • Once done put your Mooli Paratha in the frying pan and let it cook for a minute on one side, flip it over to the other side and apply some Vegetable Oil. Again after a minute or so flip the Paratha and apply some more Vegetable oil on the other side. Ensure the gas is on medium flame or else the Mooli Paratha will not be crispy and soft.
    2 tbsp Vegetable Oil
  • Roast it for sometime from both sides. Ensure it does not burn by keeping on gas for too long.
  • Voila! Your Mooli Paratha is ready to be served with tea or coffee.

Notes

Few considerations while cooking and serving -
  • Try Mooli Paratha by complimenting it with Pickle, Curd, Green Chutney or Milk Cream with Sugar (Malai).
  • Remember not to add Salt while preparing Stuffing else the Salt will make Radish loose more water and this will in turn spoil your dough.
